Castronovo’s Salitral 70% Dark Chocolate is made from native Criollo cacao grown in an unusual place—the dry, coastal desert region of Piura, Peru, where cacao has adapted to an arid environment at the edge of the Andes.
The experience begins with bright citrus and tropical fruit, then gradually moves toward delicate nutty and spice notes in the finish. With only three ingredients—cocoa beans, cane sugar and cocoa butter—this is a wonderful example of how the origin of cacao can shape the flavor of a finished chocolate.
