Last Saturday we had a blast tasting Hawaiian Tropical Smoothies here at the shop made with fresh cacao fruit. Everyone who came in loved the experience. Some people enjoyed the raw cacao, while others didn't, describing it as sweet, tangy, and slightly citrusy, reminiscent of lychee or mango. However, everyone adored the tropical smoothie we made from it! It was a burst of fresh, tropical sweetness, perfect for a hot Long Island day.

Last month, my schedule was packed with events, including three chocolate and cheese pairings, all of which received fantastic feedback. It's become a tradition for us to showcase our favorite pairings on the Pairing Wall in our shop after each event. This month, I'm thrilled to share some of these standout combinations with all of you.
Then, I introduced a standout: Chocolate-Covered Parmesan. It's a simple yet striking combination—dip small pieces of Parmesan cheese in melted dark chocolate and let them cool until the chocolate hardens. The marriage of salty Parmesan and rich chocolate offers a unique flavor experience.
White Chocolate Salted Nuts paired with Parmigiano Reggiano—salty and savory perfection. This pairing was inspired by my visit to meet Venchi Chocolate Master, Giovanni Battista Mantelli (GB), and it's truly magical. We recently paired it with a Sparkling Brut, and the result was phenomenal!

At Chocology, we are passionate about chocolate, and it seems we're not alone. On average, Americans consume almost 12 pounds of chocolate each year. That's why we set out on a mission to better understand why we crave chocolate so much and how it affects our brain. Ten years ago, we embarked on this journey, starting with a trip to Columbia University's Zuckerman Institute's Brain Expo. Join us this week as we continue to explore this connection, will be conducting our own experiment pairing chocolate and music next week.
While it's no secret that chocolate tastes and smells delicious, what many of us may not realize is how our brain's pleasure center reacts to this sweet treat. Chocolate contains over 380 chemicals, each with a unique effect on our brain and nervous system. Here are some of the most notable ones:

Chemicals in chocolate interact with our brain's neurotransmitters, such as dopamine and endorphins, resulting in mood elevation, reduced stress, and positive memories associated with chocolate. The brain looks for past experiences when we see or think about chocolate, creating a positive association and a desire to indulge.
Recent studies suggest that music may have an impact on how our brains perceive taste, leading us to think about the relationship between music and chocolate. Would you listen to jazz if it made your chocolate taste better?
We're excited to continue our research and share our findings with you. We hope that you had a wonderful festive season, filled with friends, family and chocolate! We thank you for all your loyalty and support throughout 2022, you have made our year extraordinary. As the old year passes and a new one emerges, many of us spend some time reflecting on the old and planning for the new.
At Chocology, this time of year gives us a chance to contemplate all that has happened in the past year. We see what worked well and what maybe didn’t go as planned, and start anew. We look to evaluate where we can offer our clients fresh new ways to experience chocolate. We determine how we can raise the bar when it comes to giving back and improving our products.
We welcome a brand new year with peach, hope and gratitude for those we have met and for those we have yet to meet. We are grateful for the opportunity to share our products and educate the public about all things chocolate. We hope you’ve learned more about chocolate than you knew last year.
One resolution never changes at Chocology though – we keep our focus on gratitude and service every single year. We are grateful for all that we’ve accomplished in 2022 and are excited for what is to come in 2023. We value our customers and are so delighted to have you on this chocolate journey with us.
Although we have several New Year’s resolutions, rest assured we will remain diligent in our efforts to bring quality chocolate each and every day and always show up with a grateful heart. The heart of Chocology has been and always will be focused on R.E.D. ~Relationships, Education, and being Distinctive, plain and simple. This mission not only helps us grow our business but we believe it also builds a better world, one chocolate at a time.
So, we bless the past and celebrate the future and look forward to the year to come. Thank you for being a part of the Chocology family in 2022. Chocology has an exciting new development for all you chocolate enthusiasts out there. Through the combination of science and creativity, we have a new piece of technology that will change the chocolate game forever. No, it is not a chocolate powered hoverboard (though hopefully that will be invented soon). Even better, we have a 3D chocolate printer! It combines all of the best qualities of both chocolate and technology.
To understand how the 3D chocolate printer works, first we must understand how a regular 3D printer works. A design is created and given to a computer to construct. The computer then drives a mechanical arm to place plastic, layer be layer from the ground up to match the design exactly. Our new machine functions exactly like a typical 3D printer except the boring old plastic is replaced with delicious chocolate! This means there is practically no limit to the chocolate designs we can create.
One of the reasons this machine is so spectacular is the way that technology and chocolate have to work together. The chocolate used to make designs is the same Belgian chocolate that we use for our Fat Ass Fudge that you know and love. To keep our quality the same, the printer must keep the chocolate within a 1 degree range while it makes a design with extreme precision. This is no easy task, but the result is spectacular. We get a beautifully designed chocolate treat thats ready to eat right off the printer!
This technology has so many applications we are very excited about, including printing logos for companies or names for parties. More importantly, we are excited for the way we can engage the public, especially kids, in technology and science. Regular technology doesn’t interest everybody, but adding chocolate to the equation has the potential to change all of that. Now adults and children alike have the opportunity to explore new interests in science they never knew they had.
This chocolate printer is an amazing new addition to the Chocology team. Our products are no longer limited by technical ability. The limit of our chocolate is now bound by our creativity alone, and that is something we are very exciting to share.

The holidays may be behind us, but that doesn’t slow us down one bit. We have said goodbye to all of the winter festivities and as the weather warms up our days fill up as well.

It is with a heavy heart that we inform all of our Chocology readers about the fire at one of Chocology Gives Back Non-Profits. On Saturday, February 3 a fire broke out in the restaurant of Chef Bruno, one of Madeline's CNN Heroes. Fortunately no one was hurt, however over 80% of the restaurant was destroyed. It will be between 8 and 10 months before they are able to be back up and running.
Chocology has not only donated to but worked closely with Caterina's Club and the children from the Anaheim Boys and Girls Club. The Anaheim White House was home to these charitable organizations. We send our love and prayers for a speedy recovery and are hear to help in any way we can.
