There are times when your work brings you exactly where you’re meant to be.
From our tasting table in Stony Brook to the floor of Salon du Chocolat NYC, this journey continues — rooted in craft, curiosity, and conversation.
Next weekend, Chocology will be at Salon du Chocolat NYC, the world’s most celebrated chocolate event, joining producers, chocolatiers, pastry chefs, and chocolate lovers from around the globe.
Salon is more than tastings.
It is agriculture.
It is craft.
It is community.
It is where cocoa producers and chocolate makers stand side by side — sharing knowledge, honoring the fruit, and celebrating the people behind it all.
That spirit of craft and conversation continues in my Taste & Learn: Wine & Chocolate session on Sunday at 1PM.
Wine and chocolate are both fruit.
Both are transformed by fermentation.
Both express their region.
When tasted intentionally, they reveal structure, transformation, and harmony. During the session, we’ll be pairing two of our longtime favorites with Banfi Italian wines:
Sip.
Taste.
Sip again.
Notice how the wine sharpens, then softens.
Notice how sweetness integrates.
Notice how structure shifts.

Tuesday–Thursday: 12PM–4PM
Closed Friday, Saturday & Sunday (March 6–8)
We reopen Monday, March 9 at noon and then return to regular hours.
