Yuzu sits somewhere between the familiar and the surprising—Zotter describes its character as part tangerine, part lime, with the flavor of sun-ripened tangerines.

For this Hand-Scooped creation, Zotter makes a refreshing ganache with Japanese yuzu juice, white chocolate, tangerine and a touch of lemon, then surrounds it with 50% milk chocolate.

The result is creamy and chocolatey at first, followed by a bright burst of citrus that keeps changing as it melts.
