We love the subtle changes of autumn at Chocology: the crispness in the air, the changing leaves and a hint of the festive holidays to come. Want to do something fun, tasty and educational with the kids this summer? Well, grab these simple supplies and get outside for a science project that will have your kids coming back for s’more!
DIY SUN S’MORES
In this Chocology Kids Project you will learn about:
Energy, Solar Power, Sun, Heat/Melting Point, Cooking
INGREDIENTS:
Graham crackers, mini-marshmallows and a chocolate bar or (Fat Ass Fudge!).
TOOLS NEEDED:
Scissors, Ruler, Glue Stick, Plastic wrap, Tape, A Sheet of black paper, A wooden skewer or pencil, Utility knife, Aluminum foil, 2 thermometers
A Warm, sunny day—preferably 85 degrees or warmer
PREPARATION INSTRUCTIONS:
Please read ALL of the steps carefully before cutting. Adult assistance is recommended for the use of utility knife. Also, use caution when cooking with the solar oven. It can get quite hot (sometimes up to 200 degrees)
BUILDING THE OVEN
Step 1
Clean out the pizza box.
Step 2
Use your ruler to draw a rectangle on the top of the lid, about 1 inch from the sides.
Step 3
Ask an adult to help using the utility knife (and the ruler as a straight edge) to carefully cut along 3 sides of the square, leaving the side that runs along the hinge of the box uncut. Cut all the way through the cardboard on those three sides. Once your 3 sides are cut, fold the flap (near the hinge of the box) back slightly along the attached side. Prop the flap open with tape. Lastly, cover the inside of the flap with foil,(leaving the shiny side of the foil facing out) securing with glue or tape.
Step 4
Cover the opening made by the flap (in the lid) with a layer of plastic wrap. Attach the plastic wrap to the opening's edges using shipping tape or duck tape. Make sure there are no holes in the plastic wrap and that all of its edges are completely attached to the lid. No openings please!
STEP 5
Line the inside of the box with aluminum foil (shiny side out) so that when you shut the box the entire interior is coated with foil. It is easiest to do this by covering the bottom of the box with foil first and then covering the inside part of the lid (don’t cover the plastic wrap!) with foil. Glue the foil in place.
STEP 6
Glue or tape a sheet of black paper to the bottom-center of the pizza box, on top of the foil. This will act as your solar oven's heat sink. How do you think it will help cook your food?
Step 7
Lastly, use a wooden skewer or pencil (and some tape) to prop the solar oven's lid up, at about a 90-degree angle from the rest of the box.

Let’s Make S’mores!
Before you begin, go check your weather app to see what the temperature is outside. Is it over 85 degrees? Then let’s get cooking!
STEP 1
Place your chocolate and mini marshmallows between two graham crackers.
STEP 2
Place your S’mores inside of your solar oven
STEP 3
Take your oven outside. Be sure to place your oven in a place in a sunny place, taking care to position it to where the sunshine will refect from the foil on the flap into your box.
STEP 4
Check your box every 15 minutes to see if the chocolate and marshmallows have melted. BE CAREFUL! It might just be a pizza box, but you’ve made this into an oven! IT’S HOT!

What Is Going On?
Solar Ovens convert sunlight to energy. That energy is retained for cooking food. Although there are all kinds of solar cookers, they all have similarities. For instance, many solar ovens have at least one dark surface to attract sunlight. If you’ve ever worn a black shirt on a hot summer day, you’ve probably noticed that dark colors get very hot in the sunlight. This is because dark colors hold more solar radiation than light colors. The heat absorbed by your dark paper is transferred to the food, which speeds up the process. Most solar cookers also have reflectors, which direct sunlight toward the dark cooking surface and transparent tops that let in sunlight, trapping the heat inside the cooker. Try cooking hot dogs inside of your solar oven and see what happens!

Whew! What a weekend it was for Chocology. From coast to coast, everyone on the Chocology team had lots of chocolaty hands in some awesome Easter goodness.
First off, Madeline, our Chief Creative Officer (and Linda’s daughter), dressed as the Easter bunny, made an appearance at Atria, the senior living community in Port Jefferson, New York. With a wide smile and big floppy ears, our Easter Bunny delivered hugs and Chocology goodies to all of our senior friends and their families. The smiles were contagious! Young and old alike made memories they will cherish for years. We were so excited to be a part of the Easter celebrations at Atria this year!
Then, across the country on the West Coast, our team in California was honored to participate with our charity partner, Operation Freedom Paws, on their community annual Easter Egg Hunt. The entire community showed up, including their veterans, their families and of course their service dogs.
Operation Freedom Paws supplied plastic eggs filled with goodies and the kids set off on their Easter egg hunt extravaganza. All veterans were gifted a copy of Mannheim Steamroller’s cd entitled, “Spirit of America.” And of course, all of the service dogs were rewarded with doggie treats contributed by yours truly. The kids, veterans and dogs supplied the smiles, fun and laughter – the most important ingredient for a successful event!
A big THANK YOU to everyone who made these events possible this weekend. We are honored to work with such great people!
A special thanks goes out to our team of volunteers in San Francisco who radiate the Chocology spirit and personality and who made each and every attendee feel special.
We also want to extend our gratitude to Manheim Steamroller for donating the cd’s to all of the service men and women who have made great sacrifices to make this country great!

With Labor Day behind us, it’s time to make way for fall ~ changing leaves, cooler weather and shorter days.
At Chocology, the fall season conjures up memories of comfort food. Remember coming in from raking the fallen leaves in the yard to the smell of autumn soup simmering on the stove? Or, the aroma of homemade bread baking in the oven? We love those memories and enjoy making new ones each year.
To commemorate the emergence of fall we thought we would bring you a much loved fall comfort food recipe. It combines the essence of autumn with . . . can you guess?
Chocolate of course!
Perhaps you’ll add this chocolate zucchini bread recipe to your repertoire of comfort foods. We think you’ll be glad you did.
CHOCOLATE ZUCCHINI BREAD
Prep Time: 15 Min. Cook Time: 90 Min. Total Time: 1 hour, 45 minutes
INGREDIENTS:
3 eggs
1 cup oil
2 teaspoons vanilla
2 cups sugar
4 cups grated zucchini
2-1/3 cup organic flour
1/2 cup unsweetened cocoa
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon salt
1/4 teaspoon baking powder
1/2 cup chopped nuts (optional)
1/2 cup Belgian Chocolate
DIRECTIONS:
Preheat oven to 350° F.
In a medium bowl mix eggs, oil, vanilla, sugar and zucchini.
Add dry ingredients and mix well.
Add nuts and chocolate chips.
Pour into two greased 5″ x 9″ loaf pans.
Bake for approximately 90 minutes or until a toothpick inserted into the center of each loaf comes out clean. (Time can vary greatly depending on ovens. Check often after 45 minutes)
We made this delightful bread for our customers at the Farmer’s Market this past Sunday and it was wildly popular! Some asked if we could start selling it. Parents of young children were so excited that they could actually get their kids to eat zucchini. But of course, we know everything goes better with chocolate – even zucchini!

We were so busy this week we almost forgot to post our blog and say Happy National Fudge Day! Since it was National Fudge Day (what a perfect day to celebrate!) and since we have so many new follower’s we’ve decided to repost our popular blog The Origins of Fudge.
Have you ever wondered where fudge came from? Is it American or French or Canadian? What exactly is it that sets fudge apart from other candies? And why do we love it so much?
We at Chocology like to know everything there is to know about the products we offer. Since Chocology acquired Fat-Ass Fudge in early November, we thought it might be fitting to do a bit of research about the history of fudge. While we know all about the makings of fudge, since we make it in the Chocology kitchen, we weren’t quite sure about the origins of this sweet delight. So, we set out to do research and of course, when we learn something new, we like to pass it on to you.
Every story about the beginning of fudge differs a bit but it seems that it may have started in the late 1800’s in a women’s dorm room in the United States. Here’s the picture we envision:
Several women hover around a stockpot simmering on a hot plate in a dorm room. One of the women, currently enrolled in a taffy making class, stirs the pot as the others take in the aroma. The taffy student is working diligently to perfect her caramel for class the next day. Another woman stands by the door as a look out, lest they get caught cooking in their room. She whispers, “They’re coming!” The women quickly put out the fire and hide the pot behind the rocking chair.
When the coast is clear again, the taffy student stirs and stirs but realizes the caramel is a flop. They have failed to get the temperature hot enough!
Dismayed that the ingredients were now wasted, they dipped their fingers in to see what the concoction tasted like. To their delight, it was delicious! They called their new discovery “fudge”, to identify it as a mistake. The taffy student takes her fudge to class the next day and a new product is born.
We will probably never know exactly what happen that night in the dorm room. But we do know that the first fudge was sold at a Baltimore grocery store in 1886 for forty cents a pound. In 1888, Emelyn Hartridge obtained the recipe for fudge. After selling it at an auction at a Vassar College, fudge became the newest popular confection. The desire for fudge spread to other women’s colleges where new and improved recipes were developed.
The ladies in the dorm room were only two degrees away from their caramel. Lucky for us, the pot got turned off too quickly resulting in the fudge recipes we enjoy today.
Fudge is generally made by mixing milk, sugar and butter and then heating it to 240 degrees. The mixture is then blended with chocolate and beat while it cools to obtain a creamy, smooth consistency.
Over one hundred years have passed since the invention of fudge. The recipes have developed over the years and now we have access to thousands of interpretations of that first mishap. Experimentation with ingredients has yielded us the many varieties of fudge that we enjoy today.

We then mix it with other quality ingredients to bring out the most decadent taste imaginable. A lot of care goes into our recipes; attention to detail, temperatures and fine ingredients are strictly followed. We think this makes our fudge one of the best on the market.

We left New York on April 17th with 8,004 miles ahead of us. Madeline and I plan to return to home base by May 17th - putting us currently at the half way mark of our Chocology Gives back cross-country extravaganza. Madeline and I are in absolute awe of this great country we live in, especially of the people we meet along the way!
We have a system. I drive – Madeline navigates. Being in the car together for long stretches of time has given us lots of opportunity for deep philosophical conversations. Besides solving all of the world’s difficulties, Madeline and I have decided that we’re not just New Yorkers, were citizens of America! Home is where we land each day and the people we meet are family. What an honor it is for us to work with people across America who make a difference in the world by giving back!
Besides working with some awesome organizations, we’ve had the chance to visit with friends and family and do lots of chocolate tastings along the way.
